We are officially back to school so that means back to Sunday meal planning is in full effect.  Each weekend, I spend time planning lunches and dinners for the week.  I do the grocery shopping on Saturday or Sunday depending on any weekend events.  I try to figure out what I’m making for the week before I go so I can buy any ingredients I might not have, but sometimes I just make up the menu while I’m at the store.  I always do a quick check of what I have already at home so I don’t buy something I already have and/or so I know what I have in case a brilliant recipe idea comes to my mind while grocery shopping.

Last week I made a quinoa salad and still had some leftover, so my lunches this past week were  green salads made with mixed greens, swiss chard or baby spinach from our CSA topped with quinoa salad.

I planned to make dinners this week on Sunday, Monday and Tuesday.  Wednesday and Thursday I planned for leftovers or whatever we felt like that night and Friday is pizza night.  Saturday is usually up in the air so I tend to not plan for Saturday.  We are still picking up from a CSA on Tuesdays and this week was a fish week too. Yum!

Sunday: Brian made a request to have sirloin tips for dinner.  I don’t eat red meat, so I prepared sirloin tips, baby red potatoes and roasted brussel sprouts for Sunday’s dinner.

Monday: Olive Oil Baked Shrimp with roasted cauliflower and brown rice.

Tuesday: CSA pickup day and fish day: Grilled sole with salt, pepper and lemon with leftover brussel sprouts and baby red potatoes.

Wednesday: leftover night

Thursday: Chicken sausage, broccoli and penne

Friday: pizza

CSA swiss chard

A few things to note… Each night I made a giant salad of swiss chard from our CSA, tomatoes and avocado. I topped the salad with whatever protein I made for Brian and Brendan and usually just have veggies.  I am totally and completely obsessed with swiss chard at the moment.  It is so delicious. It’s like a hidden green that I didn’t know about until this CSA season.  Also, if you know me or read about me on my About page, I don’t eat gluten, so pizza night is for Brian and Brendan, even though I like pizza. I stick with my giant salad topped with something leftover from the week.
