Week 4:  I went grocery shopping on Sunday.  We were a little busy this week… Thankfully, we are still picking up our CSA and it was the last fish pick up for the season so I kept that in mind. We ended up with a lot of leftovers this week… I planned meals for Tuesday, Thursday and Saturday.  Lunches this week were arugula and mixed green salads with leftover fish or hardboiled eggs.

Sunday, Monday, Wednesday: leftovers

Tuesday: Pollack fillets baked with olive oil, lemon and tomatoes over sautéed swiss chard and roasted cauliflower

Thursday: Sesame chicken over rice

Friday: Pizza night

Saturday: Grilled chicken skewers, roasted sweet potato fries and roasted cauliflower
