I love it when I try something new and it comes out great the first time! I have been trying to incorporate more fat into my day and decided to give homemade hummus a try. I have made cauliflower hummus in the past but it was a bit too watery for my liking. This time around it was much tastier and held together really well, very similar to legume-based hummus. Yum!!
Ingredients:
1 head of cauliflower, chopped into florets
1 lemon, zest and juice
1/4 cup extra virgin olive oil
1/4 cup coconut oil (can use 1/2 cup olive oil instead of mixing the oils)
3-4 garlic cloves or a whole head of garlic (adjust to your liking of garlic)
1/2 cup fresh basil, chopped
salt + pepper to taste
Directions:
Prepare the cauliflower by either steaming or roasting. If roasting, arrange the cauliflower on a large sheet pan, add the garlic to the pan and a little bit of coconut oil for roasting. Roast at 400º for approximately 30-40 minutes.
Add the cooked cauliflower, garlic, lemon zest, lemon juice, olive oil to a food processor. Process until smooth. Add salt and pepper to your liking and pulse a few more times to incorporate. Add the fresh basil at the end, either pulse a few times, or mix by hand, depends on how you like your herbs in the hummus.
