I promised I would add this recipe that I make for our family pretty regularly, especially during the winter months. This quick one skillet dish can be served up as a side dish to any dinner, as well as a quick breakfast or lunch option too. I love multi-faceted meals with more than one purpose. It makes my life easier and that is always a win!!


  • 1/2 – 1 pound bacon or Trader Joe’s Bacon Ends & Pieces, chopped into bite-sized pieces
  • 1 bag shaved Trader Joe’s brussel sprouts you can use regular brussel sprouts, and chop or shred them
  • 1 bag Trader Joe’s cruciferous mix (kale, broccoli, green cabbage, red cabbage) or 1-2 cups of chopped kale (any hearty greens can be added to the brussel sprouts, it’s really your preference
  • salt to taste


Chop the bacon into bite-sized pieces and add to skillet. (I use my cast iron skillet for this dish.) Sauté until browned. One the bacon is cooked to your liking (I like it a little crispy), add the brussel sprouts and greens. Cook for about 5-8 minutes until combined and greens are wilted. Serve immediately and enjoy!
